Description

This wonderful spread is delicious, creamy, nutritious and incredibly versatile - you can serve it in a number of different ways and season however you like.

Instructions

  1. Place a strainer lined with a cheesecloth over a large bowl. It’s best to double layer to be on the safe side.
  2. Pour your milk kefir over the cheesecloth, and gently twist the top of the cloth with a rubber band.
  3. Place over a large bowl in the fridge and let the whey drain for at least 6 hours or overnight.
  4. Once set, pour the whey into a jar for later use.
  5. Now you have cream cheese, which you can enjoy it as is or season with salt, fresh herbs, or other spices. Keep it tightly covered and refrigerated.
