Description

The kefir in this recipe works basically the same as buttermilk would, but is slightly healthier!

Instructions

  1. Whisk the flour, baking powder, baking soda, and salt together in a bowl. Add the kefir, melted butter, maple syrup and eggs, and whisk just until combined. Do not overbeat: a few lumps in the final batter are OK!

  2. Heat a medium non-stick skillet on medium-low and add 1/2 tsp of butter or coconut oil. Ladle 1/3 cup of batter into the skillet.
  3. Flip pancakes once you start seeing bubbles rise to the surface. This normally takes about 3-4 minutes. Cook until both sides are golden brown.
  4. Serve warm, with extra butter and maple syrup or fresh fruit.

    I often use Greek yogurt in my pancake and waffle batter–this milk kefir addition sounds like a great idea! I go heavy on the fresh fruit and toppings.
