4 stepsPlace the mozzarella and cream cheese in a microwave safe bowl. Place in the microwave for about 30 seconds, remove and stir, and microwave again for about 20 seconds or until the cheese is melted. Mix together so the cream cheese stirs into the mozzarella. Let cool for at least 2 to 3 minutes so it’s not piping hot. Add in the sourdough discard and the eggs and mix together until well combined.
In a small bowl, mix together the dry ingredients: the almond flour, lupin flour, baking powder, and salt. Add the dry ingredients into the cheese mixture and, using a wooden spoon or a stand mixer on a low setting, stir everything together until you have a cohesive dough. Wrap and place in the fridge for at least 45 minutes to chill.
Preheat the oven to 450 degrees and line a baking sheet with parchment paper. Roll out the chilled dough between two pieces of parchment paper into a circle. The dough should be about ¼ of an inch thick, or slightly thinner.
Transfer the rolled dough to the baking sheet and parbake for 15 minutes until it has set on top and is dry to the touch. Remove from the oven, add toppings, and bake again for 10 to 15 minutes or until they have cooked through and the edges of the crust are lightly browned.
