Get your ingredients together before you begin.
Soak the gelatin sheets in cold water for 5–10 minutes, until soft.
Squeeze out the excess water and set aside.
To Infuse the Lemon Water
Add the water and lemon zest to a saucepan.
Warm gently over low heat until fragrant.
Do not boil strongly, as this can make the lemon zest taste bitter.
To Make the Gummy Mixture
Remove the warm lemon water from the heat and drain.
Add the soaked gelatin and stir until fully dissolved.
Squeeze the lemon to extract the juice.
Add the honey, lemon juice, and collagen to the lemon water.
Mix well until smooth and fully combined.
To Set
Pour the mixture into a silicone mold.
Refrigerate for 2–3 hours, or until fully set.
Remove from the mold and keep chilled.
Recipe Notes
Texture & Technical Notes:
- The liquid should be warm, not boiling, when adding collagen.
- If you prefer a softer gummy, use slightly less gelatin.
- If you prefer a firmer gummy, allow the gummies to set overnight.
- Silicone molds make removing the gummies much easier.
Storage:
- Store the gummies in an airtight container in the refrigerator for up to 5–6 days.
- These are best kept chilled and are not ideal for room-temperature storage.
- Freezing is not recommended, as the texture may become watery after thawing.
