The lemon curd:

  1. In a small pot, whisk all the ingredients together over medium-low heat with a whisk for about 8 minutes.
  2. Once it thickens and becomes completely homogeneous, transfer the contents to a glass jar and allow to come to room temperature.
  3. Cover with plastic wrap in direct contact with the curd and refrigerate for at least one hour. Let your cookies cool down before frosting!

The cookies:

  1. First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
  2. In a mixing bowl, add Vegan butter and coconut sugar. Use a hand mixer to beat together.
  3. Then, add in lemon extract, milk, and applesauce. Stir together.
  4. Add in all remaining ingredients. Stir together.
  5. Use a cookie scoop to drop balls of dough onto the lined pan. Place at least 2 inches apart.
  6. Bake for 9 to 10 minutes or until cookies look set in the middle.
  7. Finally, remove from oven. Cool on pan for 10 minutes before topping with a scoop of lemon curd and enjoying.

Note

Feel free to use softened coconut oil instead of butter. Make sure it is room temperature, not melted.
