Prepare the Wet Ingredients

  1. Preheat the oven to 180°C (350°F). Grease and line a 9-inch round cake pan or similar-sized baking dish.

  1. In a large mixing bowl, whip the eggs with the sugar until light and fluffy, about 3-5 minutes. This will give the cake its fluffy texture.

Prepare the Dry Ingredients

  1. In a separate bowl, sift together the flour, tapioca flour, baking powder, salt, and spices.

  1. Gently fold the dry ingredients into the whipped egg mixture until just combined.

Add the Apples, Walnuts, and Raisins

  1. Peel and cut the apples into bite-sized pieces.

  1. Fold the chopped apples, walnuts, and raisins into the batter.

  1. Drizzle in the melted coconut oil and mix gently until the ingredients are well incorporated.

Bake

  1. Pour the batter into the prepared cake pan and smooth the top.

  1. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

  1. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Serve

  1. Serve slices of the cake warm or at room temperature, drizzled with caramel sauce if desired.
