In a blender, combine peeled mandarins and 50 mL of water. Blend on high speed for 1-2 minutes, then strain the juice into a glass.

Mix mandarin juice and water kefir and transfer the contents into a pressure-resistant glass bottle.

Add your fresh rosemary sprig, and seal the bottle.

Leave on the counter to ferment a second time for 24 hours, or up to 48 hours if you prefer a more pronounced flavor. If fermenting for longer than 24 hours, open the bottle carefully after one day to make sure there isn't too much built-up gas.

Refrigerate for up to one week.
