Start by preheating your oven to 180°C/350℉.

In a microwave-safe bowl, melt 2 Tablespoons of coconut oil for about 15-30 seconds.

In a large mixing bowl, combine the melted coconut oil, maple syrup, vanilla extract, and almond butter. Mix until it forms a smooth mixture.

Add the oats, cinnamon, sliced almonds, and salt to the same bowl. Stir well to ensure the dry ingredients are evenly coated with the liquid mixture.

Evenly distribute the mixture onto a baking sheet lined with parchment paper.

Bake in the preheated oven for about 20-25 minutes or until the granola turns golden brown, making sure to stir it every 10 minutes for even baking.

Once done, remove the granola from the oven and let it cool completely on the baking sheet. It will become crisp as it cools.

Once cooled, break the granola into clusters and store it in an airtight container.
