Instructions

  1. Mix baking soda, salt, cinnamon, gluten-free flour, ginger, and nutmeg in a large bowl until combined well.

  2. Add melted butter, dairy-free milk, Flax egg, and vanilla essence to a second bowl and whisk to combine.

  3. Pour wet ingredients into the bowl of dry ingredients and mix until no lumps of flour remain.

  4. Preheat your non-stick pan over medium-high heat. Scoop a spoonful of the mixture and cook for 1-2 minutes until bubbles form around the edge then flip. Cook for a further 30-45 seconds then remove to a plate.

  5. To serve, stack and drizzle with more maple syrup and top as desired.
