Gather your required ingredients.
In a large mixing bowl, stir together the water and honey until dissolved.
Add the dry yeast and let it sit for 10 minutes until foamy.

Stir in the psyllium husk and let it sit for another 5–10 minutes until it thickens into a gel.
🍚 Make the Dough
In a separate bowl, mix the Caputo flour and salt. Add in the psyllium gel and olive oil, then combine everything together.
Mix until the dough is smooth and thick, slightly sticky but workable.
Shape & Rise
Shape into 1 loaf or divide into buns. Place on a parchment-lined tray. Cover and let rise in a warm spot for about 1.5–2 hours, or until puffed.
Egg Wash & Sesame Topping
Preheat oven to 200°C (390°F).
Brush the top of each bun or the loaf with beaten egg, then sprinkle with sesame seeds.
