Gather your required ingredients.
In a mixing bowl, combine the water and honey.
Add the psyllium husk and mix immediately.
Let it sit for 3–5 minutes, until the mixture thickens into a gel.
To Make the Dough
Add the melted coconut oil to the psyllium gel and mix until combined.
In a separate bowl, combine the sesame seeds, flaxseed, chia seeds, sunflower seeds, pumpkin seeds, almond flour, and salt.
Add the dry ingredients to the psyllium mixture.
Mix well with a spatula until all the seeds are evenly coated and the dough starts to hold together.
Add the chopped dates at the end.
Fold them gently through the dough.
To Shape
Divide the dough into 12 equal portions.
Place a round pastry ring on a lined baking tray.
Add one portion of dough inside the ring.
Press it down gently, then flatten it with the bottom of a glass to create an even round cookie.
Carefully remove the ring and repeat with the remaining dough.
Leave a little space between each cookie.
To Bake
Bake at 170°C/340°F for 15 minutes.
The cookies should look lightly golden, set around the edges, and still slightly soft in the center.
Let them cool completely on the tray before moving, as they will firm up as they cool.

Texture & Technical Notes:
- The dough should be sticky but moldable. It should hold its shape when pressed inside the ring.
- If the dough feels too dry or crumbly, add 10–15 g extra water.
- If it feels too wet, let it rest for 5–10 minutes so the chia, flaxseed, and psyllium can absorb more moisture.
- Chopped dates should be added at the end so they stay visible and create chewy sweet pieces inside the cookie.
- Do not overbake; these cookies are better when they stay slightly soft and chewy rather than dry and crisp.
Storage:
- Store the cookies in an airtight container at room temperature for up to 2 days.
- For longer freshness, refrigerate for up to 5–6 days. The texture will become slightly firmer and chewier after chilling.
- For longer storage, freeze the cookies for up to 1 month. Thaw at room temperature before serving.
