To Make the Crackers:

Gather your required ingredients.

In a large bowl, combine all seeds, psyllium husk, salt and pepper.

Bring water to a boil. Pour boiling water over the dry mixture and stir immediately.

Add melted coconut oil and mix until fully incorporated.

Let the mixture rest for approximately 1 hour. During this time, psyllium and chia will absorb liquid and form a gel-like binding structure.

Once thickened, place the dough between two sheets of parchment paper.

Roll very thin (about 2–3 mm).

Remove the top parchment and transfer to a baking tray.

Score into crackers with a knife or pizza cutter.

Bake at 155°C/310°F for 45 minutes until fully dry and crisp.
