Instructions

First, add coconut oil, coconut sugar, and milk to a large skillet over medium heat. Stir until the sugar has dissolved.

Bring the mixture to a light boil. Lightly boil for 1 minute. Remove from heat.

Then, add in vanilla and peanut butter. Stir together.

Add in oats and the mashed bananas, and stir.

Drop by the spoonful onto a parchment-lined baking pan and flatten out the cookies.

Allow the cookies to fully cool in the refrigerator before eating.

Recipe Notes

Feel free to use all-natural creamy cashew butter or almond butter.
