Whip the heavy whipping cream until stiff peaks form.

In another bowl, whisk the kefir, maple syrup or honey, vanilla extract, and a little pinch of salt to enhance all these flavors.

Gently fold the kefir mixture into the whipped heavy cream.

Fold in the strawberries until fully incorporated, and scoop the mixture into a 9x5 loaf pan lined with parchment paper.

Cover the loaf pan tightly with foil, and freeze for a minimum of 6 hours. Defrost for a few minutes before serving.

No-churn ice cream recipes are the best. I remember a bunch these frozen no-churn homemade desserts from a few decades ago that maybe used condensed milk? This seems much more healthy!
