Description

Perfect for high tea, brunch, or a sweet mid-afternoon snack.

Ingredients

Instructions

  1. Preheat the oven to 180ºC/350ºF.

  2. In a large bowl, whisk together the oats, flour, ground cinnamon, desiccated coconut, light brown sugar, and baking soda.

  3. Melt the coconut butter until it becomes a liquid, or alternatively use coconut oil. Combine the maple syrup and coconut butter and pour the wet ingredients into the dry ingredients, incorporating the two using a spatula. If the mixture feels too dry and doesn't come together, you can add some hot water as needed.

  4. To form the biscuits, scoop 2 tablespoons of dough and roll into a ball using your hands, repeat with the remainder of the dough. Flatten the dough balls with the bottom of a glass to thin out the biscuits.

  5. Bake the biscuits for 12-15 minutes, or until cooked-through, letting them cool completely on a cooling rack before eating.

These biscuits sound healthy and even perhaps a bit like a dessert substitute for people with a sweet tooth!
