Description

Try this classic cookie, but without any gluten!

  1. Preheat the oven to 180ºC/350ºF.

  2. Place the coconut oil in a large bowl and melt over a saucepan of boiling water. Once melted, remove from the heat and add all the ingredients to the bowl.

  3. Mix well, and add more milk if it is looking a little bit too dry. Leave to sit for 10 minutes, this will allow the oats to soak and will make the cookies much easier to bind together.

  4. Take a heaping (large) Tbsp of the mixture and use your hands to form a small ball, and then squish with the back of a fork or spoon to create patties. Lay the cookies onto a greased baking tray. Repeat until the rest of the batter is used up, this should roughly make 12 cookies.

  5. Bake in the oven for 15 minutes, until golden brown.
