Made with sweet potato, almond flour, and coated in crunchy pine nuts, they’re a naturally sweet, gluten-free cookie with a hint of orange zest. Perfect with a warm drink or as a festive snack!

Prepare the Sweet Potato Mixture

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

  1. Mash the cooked sweet potato in a large mixing bowl until smooth.

  1. Add the coconut sugar, almond flour, and orange zest, and mix until a dough forms.

Shape the Panellets

  1. Take about a tablespoon of the dough and roll it into a small ball. Repeat with the remaining dough

  1. Roll each ball in the beaten egg to coat, then press pine nuts around each one, gently pressing them in so they stick.

Bake

  1. Place the pine nut-coated panellets on the prepared baking sheet.

  1. Bake in the preheated oven for 15-20 minutes, or until the panellets are lightly golden and the pine nuts are toasted.

Cool and Serve

  1. Allow the panellets to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
