You can use whatever fruits you like here, although I love this version with basil water!

Special equipment: A funnel, plastic or wood stirring utensil; a glass bottle with lid for storage.

  1. Scoop the pulp of the passion fruit using a small spoon. Then transfer the pulp using a funnel into a clean bottle.

  1. Strain the fermented water kefir directly into the bottle. Add fresh basil leaves and lime juice, and secure the cap.
  1. Let the contents sit at room temperature for 24 hours.

  1. After 24 hours, strain the mixture to remove the seeds, and discard the basil leaves. Refrigerate the strained contents until well-chilled and enjoy.
