  1. In a large bowl, add the oats, peanut butter, maple syrup, vanilla extract, and shredded coconut.

  2. Use a wooden spoon or spatula to combine all the ingredients until it forms a sticky dough.

  3. Place the mixture into the refrigerator to set for around 30-45 minutes; this will make it easier to roll the mixture into energy balls.

  4. To roll the balls, scoop 1 Tbsp of the dough into your hands and roll into a ball shape. Slightly wet your hands with water before shaping each ball to make sure the batter doesn't stick to your hands.

  5. Place each ball onto a plate covered with parchment paper. Enjoy immediately or store in the fridge in an airtight container for up to three weeks.
