These cookies have a strong peanut butter flavor and loads of chocolate chips throughout.  They are soft, gooey, and so delicious!

Instructions

First, preheat the oven to 350 degrees Fahrenheit. Line a sheet tray with parchment paper.

In the bowl of a stand mixer (or by hand), add softened Vegan butter, creamy peanut butter, and coconut sugar. Beat together.

Then, add in vanilla and egg or flax egg. Stir together.

Add in gluten-free flour and baking soda. Stir together.

Fold in Vegan chocolate chips.

Use a cookie scoop to drop cookie dough onto a lined pan.

Bake for 10 to 12 minutes or until cookies look set.

Finally, remove from oven. Allow cookies to cool for 10 minutes before serving.

Recipe Notes

This cookie dough will be slightly thick.  Be sure to use all-natural creamy peanut butter made from only peanuts and salt.
