In a large mixing bowl, whisk together the brown rice flour, arrowroot flour, and salt.

In a separate bowl, combine 1 tablespoon of warm water and the sugar, stirring until the sugar is dissolved. Sprinkle the yeast over the mixture and let it sit for 5 minutes to bloom.

To the yeast mixture, add the psyllium husk powder and whisk together. Let it sit for 2-3 minutes to form a gel-like consistency. This will act as a binder in place of gluten.

Add the remaining 1 2/3 cups of warm water to the psyllium mixture and stir to combine.

Pour the wet ingredients into the dry ingredients and mix with a rubber spatula until a dough begins to form. Then, oil your hands and knead the dough in the bowl until it comes together into a smooth ball. Gluten-free doughs are typically more sticky, so don't be tempted to add too much extra flour.

Transfer the dough to an oiled bowl, turning once to coat in oil. Cover with a clean dish towel and let it rise in a warm place for about 1 hour, or until nearly doubled in size.

Preheat your oven to 475°F (245°C) with a baking sheet or pizza stone inside to get hot.

Dust a clean surface with brown rice flour. Turn out the risen dough and divide it into 8 equal pieces. Roll each piece into a ball, dusting with flour as needed to prevent sticking.

Cover the dough balls with the dish towel and let them rest for about 30 minutes.

Working with one dough ball at a time, roll it into a circle approximately 7-8 inches in diameter and 1/4 to 1/3 inch thick. Use extra brown rice flour to prevent sticking as needed.

Place the rolled-out dough onto the preheated baking sheet or stone in the oven. Bake for 4-5 minutes, or until puffed up and just starting to take on a slight golden color. You can flip the pita and bake for an additional minute if desired for even browning.

Remove the cooked pita bread and wrap it in a clean kitchen towel to keep warm and soft while you bake the remaining pitas.
