  1. In a small saucepan, heat the raspberries over low heat until they release their juices. Remove from the heat and strain to remove any seeds.

  2. In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals until smooth.

  3. Add the coconut milk and unsweetened raspberry puree to the melted chocolate, and mix well.

  4. Place the mixture in the refrigerator for about 2 hours until it firms up.

  5. Using a small cookie scoop or spoon, scoop out portions of the mixture and roll them into balls.

  6. Roll the truffles in unsweetened cocoa powder for coating.

  7. Store the truffles in an airtight container in the refrigerator until ready to serve.
