Salted Caramel Truffles

Description

Each truffle includes a rich and velvety dark chocolate center infused with a luscious natural date caramel sauce, offering a luxurious caramel flavor that perfectly balances the intensity of the cocoa. Topped with a sprinkle of sea salt, these truffles provide a delightful contrast of flavors, creating a harmonious blend of sweetness and a touch of saltiness that will leave your taste buds craving more.

  1. In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals until smooth.
  2. Stir in the coconut milk and natural date caramel sauce until fully combined.
  3. Place the mixture in the refrigerator for about 2 hours until it firms up.
  4. Using a small cookie scoop or spoon, scoop out portions of the mixture and roll them into balls.
  5. Sprinkle a pinch of sea salt on top of each truffle.
  6. Store the truffles in an airtight container in the refrigerator until ready to serve.

Date Caramel Sauce

Ingredients:

- 1 cup Medjool dates, pitted (about 10-12 dates)

- 3/4 cup to 1 cup warm water (adjust for desired consistency)

- A pinch of salt (optional)

- 1/2 teaspoon vanilla extract (optional)

 

Instructions:

1. Soak the Dates- If your dates are not soft, soak them in hot water for about 10-20 minutes to soften them up. This will make them easier to blend.

2. Blend the Ingredients- Drain the dates and add them to a blender. Start by adding 3/4 cup of warm water, the pinch of salt, and the vanilla extract. Blend on high until smooth and creamy. Add more water if necessary, a tablespoon at a time, until you reach your desired consistency.

3. Adjust to Taste- Taste the caramel sauce and adjust the sweetness or saltiness to your liking. If you prefer a deeper flavor, you can add a little more vanilla or a small amount of maple syrup.

4. Strain for Smoothness (Optional)- For an extra smooth texture, you can strain the sauce through a fine-mesh sieve.

5. Store- The date caramel sauce can be stored in an airtight container in the refrigerator for up to a week.
