Description

I love having healthy snacks in the house, where I don’t feel guilty enjoying them throughout the day.

These savory and sweet cashew clusters include lime zest and a mixture of seeds and spices.

The following recipe makes about 20-25 cashew clusters, and can easily be scaled-up or down!

  1. Preheat the oven to 320˚F (160˚C), gather your ingredients, and line a baking sheet with parchment paper.

  1. Chop the cashew nuts into smaller pieces.

  1. Toss the chopped cashews into a large mixing bowl with the sesame seeds, pumpkin seeds, lime zest, poppy seeds, maple syrup, salt, and pepper.

  1. Taste the mixture, and add more salt and pepper if desired.

  1. Add the olive oil into a pan, along with the cumin seeds, turmeric, and paprika. Cook over a low heat until the seeds start to pop, or about three minutes.

  1. Drizzle the spiced oil into the bowl with the nuts, and toss everything together to coat all of the nuts and seeds in the maple syrup and spiced oil.

  1. Pour the nut mixture onto your parchment-lined baking sheet, and spread the contents out into an even layer using a rubber spatula.

  1. Place the tray into the oven, and bake for 15 - 20 minutes, or until the nuts are golden-brown in color.

  1. Take the tray out of the oven, and set the contents aside to cool and harden.

  1. Use a spatula to break up the nuts, and store them in an airtight container to snack on as you see fit.

Note

You can use whatever nuts you like for this recipe.

If you can’t eat nuts, try using a variety of seeds.

The lime zest adds a delicious and bright flavor; although you can use orange or lemon zest if you prefer.
