Description

This gluten-free and vegan sheet cake has a warm and cozy classic vanilla flavor.  Top with your favorite flavor of frosting!  Great for birthdays, special occasions, holidays, and more!

Instructions

  1. First, preheat the oven to 350 degrees Fahrenheit. Heavily spray a 9-inch by 13-inch pan with nonstick spray.

  2. In a bowl, combine Vegan milk and apple cider vinegar. Stir. Allow this to curdle for 5 minutes.

  3. Add brown sugar, gluten-free flour, baking soda, melted coconut oil, and vanilla extract in a large mixing bowl. Stir.

  4. Then, add in the curdled milk mixture. Stir until completely creamy and no lumps of flour remain.

  5. Pour batter into the greased pan. Spread into one even layer.

  6. Bake for about 30 minutes or until the top is browned and a toothpick inserted comes out with only moist crumbs. Note the baking time and thickness of the final cake will vary based on the size of your pan.

    Unfrosted Gluten-Free Yellow Sheet Cake

  7. Remove from oven. Allow cake to fully cool before adding frosting.

Note

Soy milk works best for this recipe.  Use store-bought or homemade frosting.
