  1. Place the olive oil on a rimmed baking sheet. Spread the olive oil over the sheet pan using your hands.

  2. Carefully remove the sourdough from the mixing bowl and add it to the baking sheet. Flip it to coat both sides of the dough in olive oil, then use your hands to flatten it slightly and spread it out into a rectangle that is 1 inch in thickness.

  3. Cover the focaccia with a damp, lint-free tea towel. Let it rise in a warm area for 3-5 hours.

  4. Preheat the oven to 218°C/ 425°F. Before you bake the focaccia, oil your fingers and dimple the dough. Press any add-ins (fresh herbs, olives, etc.) into the dough.

  5. Bake the focaccia for 25-30 minutes until golden brown and crispy.

  6. Remove the focaccia from the oven. Allow the focaccia to cool on the baking sheet for 5 minutes, then place it on a cooling rack to cool.
