Description

With only 6 ingredients and a preparation time of just 20 minutes, it's a simple yet delicious cream cheese option. This cream cheese is thick, creamy, and satisfying, and is made with freeze-dried strawberries, cashew butter, yogurt, and lemon juice.

Things to note: Wrap the tofu in a paper towel and press for 10 minutes before using.

  1. Soak the cashews overnight. Then drain and rinse the cashews.

  2. Add the tofu, strawberries, cashews, almond milk, lemon juice, and agave to a food processor, and blend on high speed for 2 minutes, until the mixture is smooth and creamy.

  3. If the mixture is too thick, add a few more teaspoons of almond milk. Taste, and add more agave if you prefer a sweeter cream cheese.

  4. Transfer to a serving bowl and cool down in the fridge. Enjoy when desired.

    Six ingredient cream cheese–doesn’t get much easier than that! Love the soaked cashews here. I even like soaked cashews on top of yogurt with some mixed fresh fruits. They get soft and have such a unique texture! I mean, I like them regular too, but eating them after they have been soaked is a unique experience.
