This soup is perfect for the winter months! 

Ingredients

Instructions

  1. Preheat the oven to 350 F.
  2. Add tomatoes to a baking tray, drizzle with olive oil, season with salt and arrange the onions and garlic cloves around. Roast for 35 min.
  3. Once out of the oven, remove the skins from the garlic and add everything into a blender with the vegetable stock. Blend until smooth.
  4. Transfer soup to a large pot over medium heat and season with salt as needed, black pepper, and herbs.
  5. Wait until it begins to simmer, then turn off the heat and add the kefir. Stir until combined and enjoy.

    It’s fun to think about adding milk kefir to items like this. I recently experimented with a water kefir and gazpacho mixture that was fizzy and incredible!
