Warming Winter Soup with Potatoes, Beans, and Sweet Corn

I noticed our website needed a few more recipes for soups and stews, and it’s getting colder outside!

In response to the slow transition into winter, I decided to write a few recipes for healthy soup and stew options that are easy to make at home on a budget. Potatoes, canned beans, and sweet corn serve as the base for this simple and tasty soup!

Instructions

Add the olive oil to a large soup pot, along with the diced onion, carrot, bell pepper, and potatoes.

Increase the heat to medium-high, and cook while stirring for about eight minutes.

Add the canned cooked beans with their liquid, along with the drained sweet corn, whole star anise, a tiny pinch of ground nutmeg, along with the chili powder, garlic powder, vegetable stock, and salt, and bring the contents up to a simmer.

Reduce the heat to low, and cook until the potatoes are tender.

When the potatoes are tender, taste the soup, and add more salt if needed. Remove the whole star anise.

Add a splash of sherry vinegar, and serve the soup in warmed bowls.

Garnish with some chopped fresh parsley leaves, if desired.
