Description

This delicious dessert can be made in advance, stored in the freezer, and kept on hand for when friends come over or for days when you need a healthy and tasty treat. 

Prep time: 20 min 

Total time: 3h - 4h

Yield: 4-6 servings 

Special equipment: A 20cm x 20cm (8-inch x 8-inch) glass baking dish.

  1. Mix your first-ferment water kefir with desired fruit juice. Pour the flavored water kefir into a 20cm x 20cm (8-inch x 8-inch) glass baking dish.

  1. Transfer the mixture to the freezer for 20 minutes or until it develops a crackly, thin layer of ice on the top.
  1. Using a fork, stir and scrape the ice - you should get a slushy consistency.
  1. Return it to the freezer and repeat the process until no liquid remains and the mixture is fully frozen, with the texture of fluffy snow (generally about 3 hours).
  1. Cover tightly, then leave in the freezer.
  1. When it’s time to serve, scoop into individual glass bowls.
    You can use the same process with fresh fruit juices to create a yummy and refreshing frozen treat!

Note

Extra tips:

  • For best results, you want to use a twice fermented water kefir, with the added flavor of your choice. We recommend using a naturally sweet fruit juice, like mango, pineapple, or blood oranges.
