Special equipment: A citrus juicer; plastic or wood stirring utensil; a fine mesh strainer; a glass bottle with lid for storage.

Instructions

  1. Juice the lemons and pour the liquid through a fine mesh strainer to remove the pulp and seeds.

  1. Add the lemon juice to the water kefir, and add in the sugar if using.
  1. Stir until the sugar is dissolved.

  1. Transfer the water kefir lemonade to pressure resistant glass bottles, or a quart jar with a lid.
  1. Ferment for an additional 24h and refrigerate once done.

    I love lemon with water kefir. The same recipe works great if you use fresh limes or grapefruit or oranges instead of lemon, although I love the acidity from the more acidic citrus versions!
