Water Kefir Vinegar 

Difficulty: Beginner Prep Time 20 mins Total Time 20 mins

Description

Eventually there will be virtually no sugar left in the water kefir. The result? A delicious natural vinegar that is absolutely loaded with beneficial bacteria! 

Prep time: 20 min 

Total time: 8 days 

Special equipment: A glass jar with cover; a fine mesh strainer; wooden or plastic mixing utensils; glass jar for storage.

  1. Prepare a batch of water kefir as usual.
  1. Keep your first ferment at room temperature for 72 hours. After that, remove the grains, but leave the cultured kefir on the counter to ferment an extra 5 days or so.
  1. Taste it from time to time to determine desired level of acidity.

  1. Once the vinegar tastes right, pour it into a small jar and keep refrigerated.
