Description

This dessert is perfect for any occasion, with a velvety texture and a delightful combination of frozen yogurt and pistachios.

Feel free to add fresh berries for sweet and tangy twist!

Things to note: Be careful not to overwork the mixture, or it will not set

Special equipment: Loaf pan, parchment paper.

  1. Toast the nuts in a dry skillet over medium heat for a few minutes until they become fragrant. Stir occasionally to prevent burning. Let them cool completely.
  2. Roughly chop the cooled pistachios and set aside a small portion for garnish.
  3. In a mixing bowl, whip the heavy cream until soft peaks form.
  4. Combine Greek yogurt, coconut sugar, vanilla extract, and salt in a separate bowl. Mix until well combined.
  5. Gently fold the whipped cream into the yogurt mixture until fully incorporated.
  6. Add the chopped pistachios (excluding the portion set aside for garnish) and fold them into the mixture.
  7. Line a bread pan with parchment paper, and gently add the mixture. Top with extra pistachios and raspberries if desired. Place in the freezer and allow the contents to set for roughly 4 hours. When ready, remove from the mold carefully and cut into slices to serve.
